Summer Pesto Pasta Salad

Makes 8-10 Servings


  • 1 lb fusilli or other spiral-shaped pasta
  • 1 pint cherry tomatoes, halved
  • 8 oz fresh mozzarella, either small balls or torn chunks
  • 3-4 tbsp fresh basil, torn into pieces
  • 6 oz container store-bought pesto
  • Parmesan cheese
  • Salt & pepper to taste


Bring a large pot of salted water to a boil. Add pasta. Boil accordingly to pasta package instructions. Drain and return to the pot. Stir in pesto. Add parmesan cheese, salt, and pepper to taste. Once cooled, add in tomatoes, mozzarella and basil.
