Avocado Citrus Salad

Makes 3-4 servings


  • 2 medium avocados
  • 1 medium grapefruit
  • 1 package thinly sliced prosciutto, about 9 slices
  • 6 cups baby arugula
  • 1 cup frisée
  • 3 tbsp fresh lemon juice
  • 3 tbsp extra virgin olive oil
  • salt & pepper to taste


Peel grapefruit, cut off ends and slice remaining fruit, removing rind and skin between each piece. Cut avocados in half, remove pit, and cut bite size pieces. Roll individual slices of prosciutto. Layer arugula and frisée in a large serving bowl, and top with grapefruit, avocado, prosciutto. Dress with lemon juice, olive oil, and salt and pepper to taste. Toss to mix together.
