For plum-infused vermouth:
Prep time: 5 minutes
Total time: 2-3 days
Makes 2 quarts

Ingredients

  • For cocktail:
  • 3 oz Prosecco Rosé
  • 1 oz plum-infused sweet vermouth
  • 2 dashes of lavender cocktail bitters
  • Garnishes: vermouth plum slice on skewer
  • For plum-infused vermouth:
  • 8 black plums, sliced
  • 1 bottle (750 ml) sweet vermouth

Instructions

For the cocktail:

Put ice and all the ingredients into a mixing glass. Stir for 10-12 seconds to make sure all ingredients blend well. Then, strain the mixture into a glass of your choice. Finally, add a skewer with vermouth plum slices as a garnish, and enjoy your drink!

For the plum-infused vermouth:

Start by using a cutting board to slice your plums into small pieces. Next, place all the slices into a large air-tight container and add the entire bottle of sweet vermouth. It’s important to tightly seal and refrigerate the container for 2-3 days to allow the flavors to marinate properly. Remember that the infused mixture can last for up to 2-3 weeks, but it may turn into vinegar. Rather than discarding it, consider using it as a cooking wine. Additionally, don’t throw away the plums – they make a great addition to salads and entrees such as beef, poultry, fish, or vegetarian/vegan options!
