The Fig & Fizz

  • 1 bottle Torresella Prosecco

  • 3 fresh figs, diced

  • 1 small red plum, diced

  • 1 oz elderflower liqueur

  • Juice from ½ lemon

  • 1-2 tbsps honey

  • 1.5 tsp fresh thyme leaves (plus more for garnish)

  • Ice

Instructions

Add the diced figs to a shaker and using a muddler, crush the figs until they are in small pieces and there is plenty of juice.


Add the diced plums, elderflower liqueur, lemon juice, honey, thyme, and ice. Shake vigorously for about 10 seconds.


Strain mixture into two glasses.


Top with Torresella Prosecco and garnish with a slice of fig or fresh thyme.
